Drew really likes pizza, and I'm kind of a fan myself. As you can imagine, due to the dough, traditional pizza is off limits to me now. This is my first attempt at making pizza SCD style. I cured the ham myself. It's pretty good, but I could used a mandoline or something to cut it finer. Provolone cheese in replace of the typical Mozzarella (which has too much lactose in it), pesto sauce and for the pizza crust I used an almond flour dough.
The part that needs the most improvement is the dough. It had a great taste with some garlic and Italian spices, but it was really dry. So dry it was hard to swallow. Next time I think I'll make it with almond butter to see if I can get a softer texture, and if that doesn't work I'll add some yogurt and see if that helps.
Last night Drew was about to take Sadie for her evening walk around 11:30, just before he goes to bed. But he is in for a surprise this night, because a sneaky neighborhood kitty skunk has decided to forage right outside our front door. Sadie is the first to notice what an exciting night she has in store, and takes off after Mr. Skunk before Drew even knew the furry little animal was out there. Within seconds the chase is over, with the skunk as the clear winner in this battle of primal tag. And Sadie is the loser, the loser with a stinky face and a mouth full of skunk stink.
By Drew's account (I was already in bed and falling asleep), Sadie was sprayed pretty much dead on in the face, getting skunk I-don't-want-to-know-what in her nose, mouth, and down her neck. For Sadie the worst was her nose and mouth. She kept shaking her head, sticking her tongue out, and I think Drew said her mouth was even foaming (again, I was mostly asleep). Poor girl even threw up a few times, I'm guessing she ended up swallowing some of the stuff (yuck!).
After two baths she was still so stinky that whatever room she was in immediately got too stinky to tolerate, so she had to sleep outside. And since we weren't sure if it was going to rain or not Drew built this impromptu "shelter" for her made of our folding card table and some plastic. She did surprisingly well outside, with seemly no anxiety issues (no torn up screen doors, for example). She even had some dinner (again) before going to bed.
This has to be my culinary master piece so far. To be honest, it wasn't my personal favorite dish, chili is good but it's not my idea of the best meal ever. Despite that, as soon as I took the first bite of this Chicken Chili I knew that I could do nothing but really appreciate this meal. It tasted like it was made by a real chef, someone who knows how to cook and wield the flavor of spices with deadly precision. But no! This chili was made by me. I did get the original recipe from a book, but I modified it so it suited my tastes better. Even my non-SCD husband ate this chili with me, went back for seconds he did.

- Plum Tomatoes
- Tomato Juice
Served over broccoli (or rice for non-SCD people) and topped with cheese.
This meal made me appreciate how many different dishes I can make with the limited amount of foods I can eat. As long as I can work in a good amount of spices, I can make chicken in many different ways. This might be the key to feeling like I'm on a limited diet versus feeling well feed.
I just made these coconut flour apple muffins this afternoon. I wasn't planning on making muffins today, but someone posted this recipe and I just happened to have all the ingredients in the kitchen. It seemed too good to be true. A sign from some higher power that I just NEEDED to make these muffins... and I'm really glad I did. MMMMM, soooo good. The first muffin I had (yes, I've had more than one in the brief time they have been out of the oven) was pretty good, but had that weird texture you get with coconut flour. Then Drew had one with butter on it. Butter! And that butter really made a difference. It made these muffins down right decadent. Here are the ingredients:
- coconut flour
- baking soda
- salt
- cinnamon
- nutmeg
- cloves
- lemon juice (or vinegar)
- coconut oil
- honey
- beaten eggs
- shredded apples
With just one pass at this recipe I did notice it was hard to keep the coconut oil in it's liquid state, since it tends to firm up at room temperature. Also, they didn't rise as much as I expected them too, so I'll put the baking soda in last next time. The original recipe was posted on the BTVC-SCD list by Terri. For my brothers wedding a really great family friend from Japan flew over and brought her family. I drove them from San Francisco to Grass Valley and back again, and also had a few meals with theme in between. It was really a treat to meet people from the Japanese culture and it was an amazing learning experience.
