My First Beef Jerky

As promised, I've been putting the dehydrator that my mom procured for me to good use while prepping for my backpacking trip. So far not much has turned out that great since I'm still figuring out which foods do best in it. Spices, like garlic powder have been most successful, dried crushed pineapple has been the least (I should have used full slices). But I did have success with my first beef jerky!
The recipe that I used can be found at the Eating SCD blog. I used light sesame oil, instead of dark because I had it on hand, and I didn't use any liquid smoke because it's hard to find SCD safe. Drew felt the jerky was a little spicy, not that he couldn't handle it, but that spicy isn't exactly what you want when you are hiking on the trail. Next time I might use less pepper and/or red pepper flakes and more pineapple juice.

Any commercial brands of jerky that work for your diet?

Just wondered about getting you some that looked good at the Thursday Night Market in Historic Folsom, but knew I didn't know enough about which ingredients are fine.

My second batch didn't turn out so well

I did make another batch and I cut it much thiner and so the drying time should have been much less. As a consequence I way over dried it and it turned out like very crisp bacon. It's not so good unfortunately. 

Most commercial brands have soy or sugar in them. Honey or fruit juices are the only sweetener I can have. It's much safer to make my own. Common jerky ingredients that are bad for me are: Soy Sauce, Worcestershire Sauce, Corn Syrup, Molasses, Sugar, Raw Sugar, Brown Sugar. Spices are questionable as well, since we often can't verify the brand of spice we don't know if any anti-caking agents were used in the spice, and those can cause a reaction for me as well.
