And mayo too.

Today during lunch I made some condiments which are sorely lacking in my diet.
Peanut Butter
Yum, yum! 1 pound of peanuts, salt, peanut oil and honey to taste. Ground up in the Cuisinart until creamy. Very easy and very delicious.
Jam
Strawberries, blueberries and blackberries (I just bought a frozen mix of fruit), apple sauce, lemon and some honey (maybe a 1/4of a cup).
Mayonnaise
I used this recipe without the whey. Next time I'll use whey from my yogurt, but I just didn't have any on hand. 1 cup oil, 3 egg yolks, 5 tablespoons of lemon (too much, I'll use 3 next time), salt and a 1/4 tsp of dry mustard.
Mayonnaise is my nemesis. I've only been successful making it 2 out of the 5 times I've tried.

I haven't actually been able to make successfully emulsified mayo until I made this batch (no picture, sorry). The recipe I used can be found here. I'm not a big of the mustard taste in this. I'd probably use less next time, and I used just under the 1/2 tsp recommended. Also, I used all olive oil, and will be playing around with oil combinations in the future I'm sure. But for now, it's a good successful first batch of mayo!

This recipe is from the book the book "Grain-Free Gourmet" by Jodi Bager and Jenny Lass. I made this 2 days in advance. I loved being able to make the sauce and just toss it in with some chicken when I wanted it. Great to have on hand for those nights where I haven't decided what to do for dinner. It's pretty sweet, which I liked, but also has a spicy kick from the cayenne I used (I didn't use pepper flakes, can't yet). Not the traditional BBQ sauce, but very yummy.
